Restaurants with three stars in the Michelin guide always cause us to distrust them because we're often very disappointed with their experience, and most of them have expensive prices compared to their cuisine.

Unfortunately, our experience at Uliassi in Senigallia was disappointing for us. The restaurant is beautiful. The setting is inspired by a modern fisherman's cabin all in white, decorated with taste and elegance. However, the kitchen was not up to the same level as the surroundings.

For dinner, we chose the Easy Classic menu with eight courses for 240 Euros.

Except for the dish called 'Rimini Fest' (Skid skewer with citronette liquid nitrogen) and the pré-dessert, the other six dishes were a disappointment for our taste. Their version of Smoke Spaghetti à la Vongolle was much less tasty than that of the restaurant Pancho in Senigallia. Mauro Uliassi's cooking fell short of what one would expect from a three-star Michelin chef.

The wine list at Uliassi is top-notch, diverse, and offers a variety of non-alcoholic wines at reasonable prices.

The service was excessively formal, sluggish, and lacking a personal touch.

Our dinner at Uliassi was a bad experience to forget, and it teaches a lesson that we should never put our feet in a three-star restaurant.
