Young chef Yuta Maruyama is passionate about French cuisine and after working a few years with the Japanese chef, Keishi Sugimura in a famous restaurant in Beaune called Le Bénaton, he decided to go back to Tokyo to open his own bistro called Les Six.
The restaurant is modestly sized with only twelve seats. For our dinner on Wednesday, April 23rd, 2025, only seven guests, including us, were present.
The menu à la carte proposed six entrees, five main dishes, and four desserts, and the price of the menu was really a good deal compared to the equivalent in Paris or elsewhere in Europe.
Yuta Maruyama's cuisine has a great potential and his cooking is generous but lack the finesse, for example his pork's tongue salad was a too big a portion for one person and his fish of the day was a little bit overcooked.
Unfortunately, on the evening of our dinner, the ventilation in his kitchen was not functioning properly, and since it was an open kitchen, guests could experience the heat and smells emanating from it.
He was cooking alone and had only one waitress who was a bit overwhelmed by the seven customers.
The drink selection was intriguing, with some non-alcoholic wines.
We hope Chef Maruyama will succeed in his new restaurant and we believe he needs a sous-chef to aid him in his cooking.
