Ken Kawasaki is a famous chef from Hiroshima and he’s just opened an outpost in Paris that bears his name.
He’s only in Paris once a month to supervise the cooking and bring Japanese ingredients to his two disciples who do the actual cooking in Paris.
Ken Kawasaki is the new sensational French restaurant headed by a Japanese chef. Our dinner there on Saturday, October 8th 2016 was a delight in every sense, from the minimalist 14-seat interior to the design of the furniture, the plates and most notably the glasses!
Ken Kawasaki’s recipes were interpreted to perfection by his two disciples. The guests have a unique set menu of nine dishes from amuse-bouche to dessert (and mignardises) for 70 euros. Every dish was finely cooked and presented, the ingredients were first rated and high quality. In our opinion, three dishes stood out: first, the sashimi squid with turnip on orange sauce; second, the shitake mushroom (that flavor!) on blown rice sauce of roasted soya; and last but not least, the dessert foam of chestnut, sarasin caramelized, pear served with a sorbet of Pastis.
The service was calm, the Japanese-speaking French maître d’ and sommelier was very helpful and knowledgeable about Japanese products and culture (he lived in Japan for five years).
Ken Kawasaki is a must visit for aficionados of Japanese cooking and culture.
